Here’s what you’ll need to create this tasty dish. This will easily serve 8 with leftovers.
Wash and cut your cauliflower and broccoli into florets. Cut up stems and tougher pieces and freeze them for use in soup or casseroles. Wash and peel your carrots. Cut into bite-sized chunks or coins. Wash your zucchini and summer squash (don’t peel) and cut them into very small cubes. Toss all of your raw veggies and your bag of frozen peas together in a big bowl with a bit of sea salt and freshly cracked pepper if it is available. Otherwise regular table salt and pepper will do.
Start by adding one cup of your salad dressing to this mixture and stir until all of the raw vegetables are coated. Taste a piece of broccoli or cauliflower, as they are the ones likely to hold more of the dressing’s flavor and moisture. Decide if you think you need to add more dressing and if so, add in one-quarter cup increments so as not to overdo the effect.
Chill your raw veggie salad for a few hours before serving for maximum flavor enhancement. It may be served upon completion, but tastes better after sitting for a while.
You may top your veggie salad with any number of delicious additions if you wish. Try Parmesan cheese, shredded mozzarella cheese, shredded cheddar cheese, or sunflower seeds.
